Turkey and Spinach Burgers

Ingredients

1 1/2 pounds ground turkey
1 1/2 cups packed fresh spinach, washed, dried, and cut into small pieces
1 cup minced onion
1/2 cup whole-wheat bread crumbs
1/4 cup chopped parsley
2 tablespoons apricot preserves
1 teaspoon freshly ground pepper
1/4 teaspoon salt

Directions:

Combine turkey, spinach, onions, bread crumbs, parsley, apricot preserves, pepper, and salt in a large bowl and blend well. Cover bowl and refrigerate several hours.

Form turkey mixture into 6 patties. Over hot coals, place burgers on a grilling grid coated with nonstick vegetable spray. Cover grill and cook 9–11 minutes, turning burgers every 3 minutes.
