50 Clove Garlic Chicken

Ingredients

2 whole chicken
50 whole garlic cloves, unpeeled
1 pound carrot
2 stalks celery
2 tablespoons cooking sherry
1/2 teaspoon nutmeg

Directions:

Cut up, skin, and trim fat from chicken. Separate garlic cloves. Cut carrots lengthwise and then into 3-inch pieces. In a 3-quart casserole, lay celery stalks followed by alternating layers of chicken, garlic, and carrots. Drizzle on sherry. Sprinkle with nutmeg. Cover tightly with heavy foil. Bake at 375° for 90 minutes. Spoon garlic cloves into a side dish, and spread on warm sourdough French bread. Serve with a tossed salad to 8 people.
