Raspberry Chicken

Ingredients

1 (12-ounce) jar pure raspberry jam
1 cup unsweetened pineapple juice concentrate
1 cup low-sodium soy sauce
2 tablespoons rice vinegar
1 teaspoon chili powder
1 teaspoon curry powder
1 teaspoon garlic powder
1 cup fresh raspberries, mashed, divided
4 (4-ounce) boneless, skinless chicken breasts
1 cup chopped fresh basil, for topping

Directions:

Mix jam, pineapple juice, soy sauce, vinegar, chili powder, curry powder, garlic powder, and 1/4 cup mashed raspberries; pour over chicken breasts in baking dish. Marinate in refrigerator for one hour. Top with remaining raspberries and basil. Bake at 350° for 30–40 minutes.
