Tomato Cheese Chicken

Ingredients

1/2 cup flavored bread crumbs
2 whole chicken breasts, skinned, boned, halved and flattened, with excess fat removed
2 teaspoons olive oil
2 tomatoes, sliced
1/4 teaspoon dried basil (or chopped fresh basil leaves)
4 slices provolone cheese
sprigs of fresh parsley, chopped

Directions:

In a flat dish, press crumbs into chicken on both sides; reserve. Grease a large oven-proof casserole dish. Lay chicken in casserole. Top chicken with tomato slices. Sprinkle tomato slices with basil or basil leaves. Top with provolone cheese and garnish with chopped parsley. Bake in a preheated 400° oven for 20 minutes. Remove from oven with a spatula. Serve on heated plates.


Fun Fact: Vegetables that are boiled actually lose some of their water content. They will weigh less after boiling in water than they did before. This is caused by the heat, which breaks down the cell walls and allows some of the water to leak from the plants cells.
