
Crisply cook bacon in a skillet over medium-high heat. When partially cooked, add onion. Continue cooking until bacon is crisp. Drain bacon and onion on a paper towel; crumble bacon. Combine brown sugar, catsup, mustard and vinegar in a large saucepan; simmer over low heat for 15 minutes. Stir in beans, bacon and onion. Simmer, uncovered, for at least 30 minutes, stirring occasionally. If desired, garnish with additional bacon.
