Salmon in Parchment

Ingredients

1/8 teaspoon dill weed
1/8 teaspoon thyme crushed
1 teaspoon salt
1/2 teaspoon black pepper
2 pounds salmon fresh or frozen, cut into 6 fillets
2 tablespoons butter melted
1 lemon thinly sliced
6 sprigs parsley
6 pieces parchment, (8x8-inch)

Directions:

Combine dill, thyme, salt, and pepper set aside. Liberally coat each salmon fillet with butter. Sprinkle with herb mixture. Place one or two lemon slices and 1 sprig parsley on each piece of parchment top each with one salmon fillet. Fold parchment to seal in ingredients. Place parchment bundles on baking tray so lemon and parsley are on top. Bake at 400 degres F. for 15 minutes. Place on serving plate and cut paper on top drip more butter over top, if desired. Serve in parchment with Tartar Sauce (recipe in this cookbook) on side.
