Herb-Broiled Fish Fillets

Ingredients

1 pound frozen fish filet
2 tablespoons butter melted
2 tablespoons onions chopped
1 cup mushrooms sliced
1 cup tomato chopped
1/8 teaspoon basil crushed
3/4 teaspoon salt
1/8 teaspoon black pepper
1 lemon cut in wedges (optional)

Directions:

Cut fish (such as haddock, cod, halibut) into serving pieces and arrange in buttered 8x8x2-inch baking dish. Brush with melted butter (or margarine) broil 3 to 4 minutes. Turn fillets over and top with vegetables (sliced green onion may be substituted for chopped onion). Sprinkle with seasonings. Broil for an additional 5 to 7 minutes or until fish flakes easily with fork. Serve with lemon wedges and Tartar Sauce (recipe in this cookbook).
