Fish Zucchini Bake

Ingredients

1 pound frozen fish filet, frozen or fresh
2 tablespoons onions chopped
2 teaspoons vegetable oil
2 cups zucchini diced and unpeeled
1 (8-ounce) can tomato sauce
1/2 cup mushrooms sliced
1/4 teaspoon basil crushed
1/8 teaspoon black pepper
salt

Directions:

Thaw fillets (such as cod, perch, sole, haddock), if necessary. Cut into four serving-size pieces arrange in single layer in greased shallow baking pan. Saute onion in oil add zucchini cook until barely tender, about 5 minutes. Place 1/4 zucchini-onion mixture on each fillet. Combine tomato sauce, mushrooms, basil, pepper, and salt to taste pour over fish. Bake at 350 degrees F. for 20 minutes or until fish flakes easily when tested with fork.
