Reuben Sandwiches

Ingredients

2 tablespoons buttermilk
1/2 cup thousand island salad dressing, commercial
8 slices turkeys breast, cooked
4 slices Swiss cheese
8 slices rye bread dark
1 cup sauerkraut drained
1/2 cup butter softened

Directions:

In a small bowl, combine buttermilk and Thousand Island dressing set aside. For each sandwich, put 1 slice turkey breast (corned beef can be substituted) and 1 slice Swiss cheese (Muenster or Monterey Jack cheese can be substituted) on each of 4 pieces of bread (pumpernickel can be substituted for dark rye bread). Heap on sauerkraut and spread dressing mixture over it. Put on second slice of turkey breast or corned beef, then top with second slice of bread. Spread outside of sandwiches with soft butter (or margarine). Grill, butter side down, on both sides in hot skillet and cook until cheese melts. Serve hot.

Variation
Deviled-Ham Reubens: Use 1 can (6 1/2 ounces) deviled ham in place of turkey or corned beef. Use 8 slices of cheese. Arrange 4 slices cheese on 4 bread slices spread with deviled ham top with sauerkraut, then with remaining cheese and bread slices. Grill as for Reuben Sandwiches.
