Fried Egg Sandwiches


Serves: 4

Ingredients

4 eggs
2 teaspoons butter
salt
black pepper
8 slices wheat bread
4 teaspoons butter
2 tablespoons ketchup

Directions:

For each sandwich, heat 1/2 teaspoon butter (or margarine) in medium skillet. Crack one egg into melted fat break yolk with edge of eggshell. When egg has cooked on bottom, turn over with spatula cook remaining side. Season with salt and pepper to taste. Place hot fried egg on slice of buttered bread add catsup (or chili sauce) as desired top with second slice of bread. Serve hot.

Variation
Fried Egg Sandwich with Lunch Meat: After breaking yolk, lay 2 or 3 thin slices or 1 thick slice lunch meat over broken yolk, pressing it into raw egg. When egg has cooked on bottom, turn over with spatula and cook remaining side. Continue as above.
