Chopped Pork Sandwich Filling

Ingredients

1 (12-ounce) can pork luncheon meat
4 eggs hard-cooked and chopped
1 cup Cheddar cheese, shredded
1 cup celery finely diced
1/2 cup dill pickle, chopped
1/2 cup mayonnaise
1 teaspoon Dijon style mustard
1/2 teaspoon salt

Directions:

Grate or chop luncheon meat combine with eggs, cheese, celery, pickles (or relish), mayonnaise, and seasonings. Makes 5 cups filling or enough for 12 sandwiches.

Variation
Hot Ham Sandwiches: Fill hot dog or hamburger buns with Chopped Pork Filling, wrap in foil and bake at 350 degrees F. for 20 minutes or until heated through.
