1 15-ounce carton ricotta cheese
1/4 cup romano cheese grated
1/4 cup parmesan cheese grated
1/4 cup parsley minced fresh
2 eggs
1 garlic small, crushed and minced
1/4 teaspoon salt
Black pepper Freshly ground
2 1/2 cups tomato sauce
12 Manicotti Crepes (see below)
1 1/2 cups mozzarella cheese shredded (6 oz.)
In a medium bowl combine cheeses, parsley, eggs, garlic, salt and pepper to taste; set aside.
Preheat oven to 375° F. Spread 1 cup sauce in the bottom of a 13 x 9 x 2-inch baking dish.
Place about 2 tablespoons filling in each crepe; roll up. Place seam-side down in baking dish. Cover with remaining sauce. Sprinkle with cheese. Bake for 30 minutes or until heated through.
