Stuffed Flounder

Ingredients

2 eggs
2 cups cooked shrimp or crabmeat
1 cup cream
2 tablespoons butter
1/2 cup sliced mushrooms
2 teaspoons chopped chives
1 tablespoon flour
4 tablespoons sherry
4 (3/4-pound) flounders
1 Additonal butter

Directions:

Mix eggs, shrimp, and cream. Melt butter; add mushrooms and chives, and sauté until soft; add flour and cook until bubbly. Add shrimp mixture and sherry, and cook until thick. Slit flounder along backbone and cut flesh of fish away from bone, but leave intact. Spoon as much stuffing into slit as possible. Top with butter and bake in 300° oven until done, about 30 minutes.

If you want to use fewer flounders, the stuffing may be made as directed, and the remainder can be stored in the refrigerator for use at a later date.
