Oyster Stew


Serves: 4

Ingredients

6 green onions (scallions), chopped fine
1 rib celery, chopped fine
1 stick butter or margarine
2 tablespoons flour
2 dozen small oysters with liquid
1 quart milk
1 Salt and pepper to taste
1 Worcestershire sauce
Slices of toast bread, cut into croutons
2 sprigs parsley, minced

Directions:

Sauté chopped vegetables in margarine and flour. Drain oysters and add liquid to vegetables. Add preheated milk, then oysters, and simmer until oysters are plump and edges begin to turn. Add salt, pepper, and Worcestershire to taste. Serve with croutons. Sprinkle with parsley.
