Oven Baked Catfish

Ingredients

6 catfish filets, each about 6 ounces
1/2 teaspoon Creole seasoning
1 (8-ounce) carton sour cream
1 cup mayonnaise
1 (1-ounce) package ranch salad dressing mix
1 (2.8-ounce) can French fried onion rings

Directions:

Preheat oven to 350°. Put fillets in shallow bowl and sprinkle evenly with Creole seasoning. Set aside. In a small bowl, combine sour cream, mayonnaise, and salad dressing mix. Blend well. Pour mixture into shallow bowl. Process onion rings in blender or food processor until finely crushed. Put into another shallow bowl. Dip fillets first in sour cream mixture, then in crushed onion rings and coat evenly. Put fish in an ungreased shallow baking pan. Bake uncovered until fish flakes easily when tested with a fork, about 20 minutes.


Fun Fact: The Delta Blues Museum, housed in the former Yazoo and Mississippi River Valley Railroad Depot in Clarksdale, exhibits photos, instruments, and local artifacts relating to the history and significance of the Delta Blues.
