Crushed Potatoes


Serves: 4

Ingredients

2 pounds russet potatoes 1 1/2 inch dice
1 teaspoon salt
1/4 cup olive oil
1/4 cup melted unsalted butter
sea salt and white pepper to taste
1/4 cup thinly sliced scallion

Directions:

Place potatoes in a large saucepan and cover with water by 1 inch. Add salt and bring to a boil on high heat. Lower heat and simmer until potatoes are tender, about 20–25 minutes. Drain well, add the oil and butter and “crush,” leaving some lumps of potato. Season to taste with salt and pepper. Fold in the scallions and serve immediately.
