Apple and Oats Betty

Ingredients

6 baking apples peeled, cored, and sliced
1 teaspoon lemon juice
1/2 teaspoon ginger ground
1 teaspoon cinnamon
2 tablespoons frozen apple juice concentrate thawed
1/2 cup almonds chopped
1/4 cup cashew nuts chopped
1/2 cup pecans, chopped
1 cup rolled oats
1/2 teaspoon baking soda
3 tablespoons maple syrup

Directions:

Preheat oven to 350 F. Combine with lemon juice, ginger, half the cinnamon and apple juice concentrate. Pour into greased 9x9 pan. Mix nuts, oats, remaining cinnamon, baking soda and syrup. Sprinkle over apple mixture. Bake until topping is golden brown, about 20 to 25 minutes. Serve warm.
