Easy Fried Rice

This easy fried rice recipe captures the flavor of fried rice from your favorite take-out spot. Use leftover rice and leftover chicken for a satisfying meal that's simple to put together.

Ingredients:
2 large eggs, beaten
1/4 teaspoon salt
3 tablespoons canola oil, divided
4 cups cooked rice
1 1/2 cups frozen stir-fry vegetables blend
1/2 cup sliced green onions
1 garlic clove, minced
1 cup diced cooked chicken
3 tablespoons soy sauce
1 tablespoon chicken broth
1/2 teaspoon pepper
1/4 teaspoon ground ginger
4 bacon strips, cooked and crumbled

Directions:
In a small bowl, combine the eggs and salt, whisking thoroughly to combine them. In a large skillet or wok over medium heat, scramble the eggs in 1 teaspoon of the oil, breaking the eggs into small pieces. Remove them from the skillet and set them aside.

Add the remaining 2 tablespoons plus 2 teaspoons canola oil to the skillet. Stir-fry the rice over medium-high heat for five minutes, then add the vegetables, onions and garlic. Continue to stir-fry, mixing well, for an additional five minutes. Add the chicken, and stir-fry until the meat is heated through, three to five minutes.

In a small bowl, combine the soy sauce, broth, pepper and ginger. Add the sauce to the rice mixture, stirring to coat.

Finally, add the cooked and crumbled bacon and fold in the eggs, stirring gently but thoroughly to combine. Heat through completely, until your stir-fry is sizzling and ready to serve.
