Boiled Potatoes with Butter

I cut up the potatoes earlier in the afternoon and let them sit in the bay leaf/garlic/salt mixture for a couple of hours before cooking them. The flavors penetrated the potatoes more fully, and was delicious.

Ingredients:

1 pound small new potatoes
1 head garlic, halved crosswise
1 bay leaf
1 teaspoon whole black peppercorn
kosher salt
2 to 4 tablespoons unsalted butter

Directions:

Tie the garlic, bay leaf, and peppercorns in a piece of cheesecloth for easy removal after cooking. Add the spices and potatoes to a large saucepan; add cold water to cover by about an inch and season with salt. Bring to a boil, lower the heat, and simmer until potatoes are fork tender, about 15 to 18 minutes depending on their size.

Drain and discard the garlic, bay leaves, and peppercorns. Halve the potatoes, if large, toss with the butter and season with salt, and pepper, to taste. Keep warm.
