Gnocchi Lasagna

Better than pasta - give this a try to delight your taste buds. Kids love it. Look in the pasta section, gnocchi comes in a box. If you are a meat eater, add 1 lb crumbled, cooked italian sausage.

Ingredients:
| 2 lbs | gnocchi |
| 2 | small onions, finely chopped |
| 2 | small red bell peppers, finely chopped |
| 2 | fresh garlic cloves, minced |
| 2 (14-ounce) cans | diced tomatoes |
| 1/2 tsp | dried oregano |
| handful | fresh basil |
| 9 oz | mozzarella cheese, sliced |
| salt to taste | |
| freshly ground pepper to taste | |
| 2 tablespoons | olive oil |
| dash | hot pepper sauce |
Directions:
Heat the olive oil and saute the peppers and onions for 5 minutes until soft,. Add the garlic and cook for 1 minute more. Add the diced tomatoes and season with salt and pepper. Stir in the oregano and dash of hot sauce.
Add the gnocchi. Simmer for 10-15 minutes, until the gnocchi is soft and tender. Remove from heat. Tear up the basil and gently stir into the gnocchi. Transfer to a casserole dish.
Top with sliced mozzarella. Bake for 20 minutes at 350° until cheese melts.
