Waffled French Toast

Ingredients

1/2 cup milk
4 eggs
1 tablespoon sugar
1/2 teaspoon salt
2 tablespoons butter
8 slices bread

STRAWBERRY BUTTER:
1/2 pound butter
1/2 cup powdered sugar
10 ounces frozen strawberries, thawed and drained

Directions:

Preheat waffle iron. If the iron is well seasoned (in other words, had its share of waffles baked in it without being abused by soap!), there should be no need to oil it. In a shallow bowl, with a flat whisk, combine milk, eggs, sugar, and salt, then melted butter. Dip bread slices, one at a time, in egg mixture and drain. Bake in waffle iron 2-3 minutes, until brown. Serve with bacon or sausage and maple syrup or Strawberry Butter.

Strawberry Butter:
Just wonderful over pancakes, waffles, and French toast.

Combine all in a mixer or food processor until smooth and creamy. It’s best served at room temperature, but can be stored in fridge for several weeks. Yields 2 1/2 cups.
