Yams 'n Apples

Ingredients

2 medium yams or sweet potatoes
2 medium McIntosh or Granny Smith apples
1/4 cup brown sugar
1/4 cup (half stick) butter cut into chunks
1 teaspoon cinnamon
1 teaspoon salt

Directions:

1. Peel the yams, then cut into 1/2 inch slices.
2. Place the slices in a large pot with enough water to cover by an inch or so, and bring to a boil. Reduce the heat to medium, then gently boil for 15 minutes, or until the yams are tender but firm.
3. Peel, core, and thinly slice the apples. In a 9?inch round casserole dish, alternate layers of yams, apples, brown sugar, and chunks of butter until all the ingredients are used up.
4. Bake uncovered in a preheated 375°F oven for 45 minutes, or until the yams and apples are tender. Serve hot.
