Ingredients

2 medium russet potatoes
1/2 cup chopped onion
1/2 cup chopped red bell pepper
3/4 cup canola oil
salt

Directions:

1. Precook the potatoes as in Steps 1 and 2 for Hash Browns. Dice the potatoes into small cubes.
2. Chop the onion.
3. Chop the bell pepper.
4. Heat the oil in a frying pan until it is very hot, but not smoking. Add the potatoes and let them cook about 10 minutes while stirring frequently. Add the onions, bell pepper, salt, and pepper, and cook another 5 minutes or until the potatoes are golden brown. Serve hot.

Important tip
Be sure to dice the potatoes into very small pieces so they cook through. Because the potatoes will take longer to cook than the onions and peppers, don’t add these ingredients until the potatoes are light brown and partially cooked.
