EZ Banana Bread

Ingredients

2 very ripe bananas
1 stick (1/2 cup) softened butter
2 large eggs
1 teaspoon vanilla extract
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 1/2 cups all purpose flour
1 cup coarsely chopped pecans or walnuts

Directions:

1. Mash the bananas in a large mixing bowl.
2. Add the butter, eggs, vanilla, sugar, baking powder, and salt to the bowl and stir well. Add the flour half?cup at a time, then stir in the nuts.
3. Spoon the batter into a greased and floured 8x4 inch loaf pan. Bake in a preheated 350°F oven for 1 hour, or until a toothpick inserted in the center comes out clean. Cool 10 minutes before removing from the pan.
4. Cool the bread completely before cutting into slices and serving.

Important tip
You can use bananas that are brown and overripe for this recipe. Matter of fact, the riper the bananas (within reason, of course), the more flavorful the bread.
