Vegan Chocolate Mousse Pie

Ingredients

1 3/4 cups semisweet chocolate chips or chunks
1 pound silken tofu
CRUST
1 cup Bhutanese red rice flour
1/4 cup teff flour
4 tablespoons maple syrup
3 tablespoons hazelnut butter
2 tablespoons canola oil
1 tablespoon vanilla extract
1/4 teaspoon sea salt

Directions:

1. Preheat the oven to 375°F. Lightly oil a 9-inch pie pan and set aside.

2. To make the pie crust, place all of the crust ingredients in a large bowl and mix to form a soft dough.

3. Press the dough over the bottom and sides of the pie plate with your fingers. Poke holes in the dough with a fork, then bake for 10 minutes, or until the crust is lightly browned.

4.While the crust is baking, prepare the filling. Drain the tofu, transfer to a food processor, and purée until smooth. 5.Melt the chocolate in a pot or double boiler over low heat, and add to the tofu. Blend until thick and smooth. Taste and add more melted chocolate, if desired.

6. Pour the mousse filling into the baked crust. Chill for 2 hours before serving.
