Orange Layer Cake

Ingredients

CAKE
1/2 cup canola oil
1 cup honey
1 teaspoon vanilla extract
3 teaspoons Ener-G Egg Replacer mixed with 4 Tbsp orange juice
3/4 cup unsweetened applesauce
1 cup barley flour
1 cup oat flour
2 teaspoons double acting baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup orange juice
grated zest of 1 orange
ORANGE FROSTING
1/2 cup vegetable shortening
1/2 cup honey
2 teaspoons vanilla extract
4 tablespoons oat or enriched rice milk
1 1/3 cups "Better Than Milk" rice powder
grated zest of 1 orange

Directions:

Preheat oven to 350 degrees. Grease two 8-inch cake pans, then cover the bottom with a piece of parchment paper cut to fit, and then grease again (or use two 8-inch round no-stick springform pans and grease very lightly). Combine oil, honey, and vanilla extract in a large bowl, using an electric mixer. Add egg replacer and applesauce. Combine flours, baking powder, baking soda, and salt. Add to bowl, alternating with orange juice. Beat in orange zest. Pour into pans and bake 30 minutes until top is lightly golden and sides are pulling away from pan. When done, let pans cool on a wire rack 10–15 minutes before removing cakes. Once cooled, loosen cake from sides with a knife or spatula if necessary, turn over, tap bottom, and gently remove cake. Peel off parchment paper and flip. Let cool completely before frosting. To make frosting, combine vegetable shortening and honey with an electric mixer. Add vanilla extract and rice/oat milk. Mix. Then add Better Than Milk Powder and beat until fluffy. Add orange zest. When cakes have cooled, put first layer on cake plate or platter and, using a spatula or wide knife, frost the top. Put second layer on top of this, then frost top and sides. You may serve this cake cold or at room temperature.
