Old-Fashioned Oatmeal Cookies

Ingredients

1/2 cup vegetable shortening
1/4 cup molasses
1/2 cup maple syrup
1 teaspoon vanilla extract
1/2 cup plus 2 Tbsp oat flour
1/2 cup plus 2 Tbsp barley flour
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon baking soda
1 teaspoon double acting baking powder
1 cup oats
1/2 cup raisins

Directions:

Preheat oven to 350 degrees. Beat shortening with molasses and maple syrup in a large mixing bowl. Add vanilla extract. Combine oat flour, barley flour, salt, cinnamon, baking soda, and baking powder. Add to mixing bowl. Add oats, stir, and then add raisins. Drop batter by heaping teaspoons onto a parchment-lined cookie sheet, and bake 10 minutes, until cookies are browning around the edges. Let cool on cookie sheet before transferring to plate with a spatula.

Variation For a more decadent cookie, omit the raisins and add 1/4 cup shredded coconut and 1/4 cup dairy/soy-free chocolate chips.
