Skillet Turkey Tacos

2 cups elbow macaroni, uncooked
1 pound ground turkey
1/2 cup onion, chopped
1/2 cup green pepper, chopped
4 (8-ounce) cans tomato sauce
1/2 cup picante sauce
1 cup baked tortilla chips, crushed
1 to 2 cups shredded lettuce
1 cup shredded low-fat Cheddar or Mexican-blend cheese
1 Garnish: low-fat sour cream, chopped avocado, sliced black olives, sliced jalapeño peppers
Optional: additional picante sauce


Cook macaroni according to package directions; drain. Meanwhile, spray a skillet with non-stick vegetable spray. Over medium heat, brown turkey with onion and green pepper until turkey is no longer pink; drain. Add sauces and cooked macaroni; bring to a boil. Reduce heat to low. Simmer about 10 minutes. Divide crushed chips among 4 dinner plates; top with turkey mixture, lettuce and cheese. Add toppings; drizzle with more picante sauce for extra heat, if desired.

Tip: Whimsical vintage salt & pepper shakers add a dash of fun at mealtime. Look for them at flea markets or thrift’re sure to find some favorites.
