Easy Beef & Tater Burritos

Serves: 6

1 pound ground beef
2 russet potatoes, peeled and diced
2 tablespoons olive oil
1/2 red or white onion, chopped
salt, pepper and garlic powder to taste
Optional: red pepper flakes to taste
6 (10-inch) flour or corn tortillas
Garnish: shredded Cheddar cheese, sour cream, other favorite toppings


Brown beef in a skillet over medium heat; drain and set aside. Meanwhile, place potatoes in a microwave-safe dish; add a small amount of water. Cover with plastic wrap; vent and microwave on high for 8 to 10 minutes, until tender. Add oil, onion and potatoes to skillet; cook until tender and golden. Return beef to skillet; add seasonings to taste. To serve, spoon mixture onto tortillas. Roll into burritos, adding cheese, sour cream and other desired toppings.

Tip: Spice up your favorite ranch salad dressing. To one cup dressing, whisk in 1/2 teaspoon ground cumin and 1/4 teaspoon chili powder. Let stand a few minutes so the flavors can blend.
