Tender Whole Trout


Serves: 4

Ingredients

4 whole brook trout, gutted and cleaned, 10 to 12 ounces each
kosher salt
freshly ground black pepper
extra-virgin olive oil

1 lemon, cut into wedges (optional)

Directions:

Season the interior cavity of the trout with salt and pepper. Lightly brush or spray both sides of the exterior with olive oil. Grill the fish over Indirect Medium heat until opaque in the center, about 15 minutes. Serve warm with lemon wedges, if desired.
