Open Faced Breakfast Sandwich

Ingredients

4 slices wheat bread (or multigrain)
4 large eggs
2 tablespoons light sour cream
1 tablespoon butter or margarine
2 ounces gouda cheese
1/2 cup diced ham or cooked and diced sausage
1/2 cup diced red onion
1 avocado thinly sliced

Directions:

Turn toaster oven to toast on darkest setting.

Place bread slices directly on wire rack in toaster oven and toast for 3–5 minutes, or until lightly browned. Remove bread and then turn toaster oven to broil at 450 degrees.

Mix together eggs and sour cream and then scramble with butter in a medium frying pan.

Place slices of toast on a baking sheet. Thinly slice cheese to fit bread slices. Top each piece in the order of the following: cheese slices, scrambled eggs, ham, and onion. Broil for 5–8 minutes, watching closely so as not to burn. Remove from oven and cool a few minutes. Top with avocado slices and serve immediately. Makes 4 servings.
