Classic Tuna Melts

Ingredients

1 (16-ounce) can albacore tuna in water
2 tablespoons light cream cheese
1 teaspoon Dijon style mustard
1 tablespoon lemon juice
2 tablespoons minced fresh parsley
1 1/2 cups grated gruyére cheese or Monterey Jack cheese
3/4 cup grated Parmesan cheese
6 slices white or whole grain bread

Directions:

Turn toaster oven to toast on darkest setting.

Mix together all ingredients except bread. Spread each slice of bread with tuna mixture.

Place slices of bread, two at a time, directly on wire rack in toaster oven. Cook 5–8 minutes, or until bread is toasted on bottom and browned and bubbly on top. Serve immediately. Makes 6 servings.
