Spinach with Black Bean Sauce


Serves: 4

Ingredients

6 cups hot water
2 bunches fresh spinach washed, dried, and stemmed
6 tablespoons olive oil
1 1/2 teaspoons finely chopped garlic
2 tablespoons thinly sliced peeled fresh ginger
2 tablespoons soy sauce
2 teaspoons Thai or Chinese bean condiment
2 teaspoons Thai sweet black bean sauce
1/2 teaspoon black pepper

Directions:

Bring water to boil in a stockpot. Add spinach and boil just until wilted-it will be less than a minute. Drain spinach in a colander and set aside.

Heat oil in a large skillet over high heat. Add garlic and sauté until lightly colored. Add remaining ingredients and cook, stirring, for 1 minute. Add spinach and stir for 2 minutes. Transfer to a platter and serve.
