Country-Style Breakfast Pizza

Serves: 8
Total Calories: 853

1 (13.8-ounce) tube refrigerated pizza dough
Optional: garlic salt
1 (24-ounce) package refrigerated mashed potatoes
10 eggs, beaten
Optional: chopped vegetables, cooked ham or sausage
1 (8-ounce) package shredded Colby Jack cheese
1 (4-ounce) package crumbled bacon pieces

Spread pizza dough in a pizza pan; sprinkle with garlic salt, if desired, and set aside. Place mashed potatoes in a microwave-safe bowl; microwave on high setting for about 5 minutes, or until heated through. Spread potatoes over dough. Scramble eggs as desired, adding vegetables, sausage or ham, if desired. Spread scrambled eggs evenly over potatoes. Sprinkle with cheese; top with bacon. Bake at 350 degrees for 30 minutes, or until cheese is melted and bubbly.

Tip: Surprise sleepyheads at breakfast…serve each a made-to-order omelet in a mini cast-iron skillet. A cheery red bandanna tied around the handle makes a nice, big napkin.
