Granola Bar Muffins

1 cup whole wheat flour
1/2 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1 tablespoon ground flaxseed
1/2 cup plain Greek style yogurt
2 tablespoons water
1 egg
2/3 cup agave
2 tablespoons olive oil
2 teaspoons vanilla extract
2 cups old fashioned oats
1/2 cup chopped walnuts or pecans
2/3 cup raisins (or other dried fruit ie: cranberries)


In a large bowl combine flour, baking soda and powder, cinnamon, salt and flax. Add in yogurt, water, egg, agave, oil and vanilla and mix well. Mix in oats, nuts and dried fruit. Stir until just blended. This batter is very thick and dense. You will be able to spoon it easily into 12 muffin cups. Bake at 400° for 15-18 minutes.
