Bran Apple Muffins

2/3 cup honey
3 tablespoons ground flaxseed
1/4 cup water
1/4 olive oil
3/4 cup almond milk
1 1/2 cups wheat bran
1 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
3/4 teaspoon cinnamon
1 apple diced
3/4 cup raisins (optional)


In a large bowl combine honey, flax, water and oil. Mix well. In a separate bowl combine wheat bran, flour, baking soda, baking powder, cinnamon. Add the dry mixture to the wet, alternately with milk. Stir in apples and raisins. Bake @ 350° for 18-22 minutes or until done.
The diced apple in this recipe helps to make this muffin a very sweet and moist bran muffin. Delicious!
