Lobster Stuffing Pie

Ingredients

CRUST
3 cups seasoned stuffing mix
3/4 cup melted butter or margarine
PIE FILLING
1/4 cup melted butter or margarine
1/4 cup all-purpose flour
1 1/2 cups milk
1 pound cooked lobster meat, cut into pieces
3 tablespoons chopped fresh chives
2 tablespoons minced pimiento or red bell pepper
1 teaspoon prepared mustard
salt to taste
freshly ground black pepper to taste
1/2 cup sour cream
parsley for garnish

Directions:

1. Preheat the oven to 400°F. Liberally grease a 9-inch pie pan and set aside.

2. To make the crust, place the stuffing mix on a flat surface and use a rolling pin to crush the mix into fine crumbs.

3. Place the stuffing crumbs in a medium-sized bowl and blend in the butter or margarine. Press the mixture firmly against the bottom and sides of the prepared pie pan and set aside.

4. To make the filling, place the butter or margarine and the flour in a medium-sized saucepan and cook over medium heat, blending well. Gradually stir in the milk and cook until thick, stirring constantly. Stir in the lobster, chives, pimiento or red pepper, mustard, salt, and pepper. Remove the saucepan from the heat and fold in the sour cream until blended.

5. Pour the filling into the pie crust and bake for 15 minutes, or until thoroughly heated. Garnish with the parsley before serving.
