Bacon and Scallion Stuffing

Ingredients

8 ounces bacon dried
6 cups cornbread or seasoned stuffing mix
1 bunch scallion chopped
1 green bell pepper chopped
1 cup chopped celery
1 cup tomato juice
1/2 cup chopped fresh parsley

Directions:

1. Preheat the oven to 325°F. Liberally grease a 2 1/2- to 3-quart casserole dish and set aside.

2. Place a medium-sized skillet over medium heat. Add the bacon, and fry until crisp.

3. Place the bacon and drippings in a large bowl. Add all of the remaining ingredients, and stir until the ingredients are well mixed and the stuffing is moistened.

4. Transfer the stuffing to the prepared dish, cover, and bake for 30 to 40 minutes, or until heated through. If a crisp top is desired, uncover the dish and bake for 10 additional minutes.
