Hot Italian Sausage Stew

Ingredients

1 tablespoon plus 1 teaspoon olive oil
8 ounces hot Italian sausage
1 medium onion chopped
1/2 cup water
2 tablespoons balsamic vinegar (preferably fruit flavored)
3 peas and carrots cut into large bite sized pieces
3 medium red potatoes cut into large bite sized pieces
1 1/2 cups diced ripe tomatoes
1 clove garlic minced
1 teaspoon chopped fresh thyme
1 teaspoon chopped fresh rosemary
salt to taste
black pepper to taste
finely chopped parsley for garnish
1 to 1 3/4 pound Bread Bowl

Directions:

1. Heat 1 tablespoon of the oil in a large heavy-bottomed pot over medium heat, add the sausage, and brown on all sides. Transfer the sausage to a cutting board, and cut into large bite-sized pieces.

2. Add the remaining teaspoon of oil to the pot along with the onion and sausage pieces. Cook over medium heat about 7 minutes, or until the onion is translucent. Add the water, vinegar, carrots, potatoes, tomatoes, garlic, thyme, and rosemary, and stir well.

3. Bring the ingredients to a boil, then reduce the heat to low. Cover the pot and simmer for 45 minutes, stirring occasionally, until the potatoes are tender. Add the salt and pepper. (If the stew is too thick, add a little water to reach the desired consistency.)

4. Spoon the stew into the bread bowl, sprinkle with parsley, and serve.
