Orange Beet Soup


Serves: 5

Yield: 5 1/2 cups

Ingredients

1 1/2 teaspoons coarsely chopped garlic
4 whole cloves
2 cups beet juice or water
4 cups peeled, chopped beets
1 1/2 cups orange juice (fresh squeezed is best)
1/2 teaspoon salt (optional)

Directions:

Boil the garlic, cloves, beet juice, and beets for 10-15 minutes until the beets are soft. Blend these ingredients in a food processor or blender. Be careful not to overfill your blender jar, or you’ll be cleaning up beet juice!

Add the orange juice and stir well. Heat up if serving hot, or cool down if serving cold.
