Yield: 8 to 10 cups
In a soup pot, boil the broccoli, potatoes, and onion in the water for 10 minutes.
Add the parsley and dill to the boiling vegetables, and simmer for 5 more minutes.
In a blender or food processor, blend the contents of the soup pot along with the nondairy milk in small batches. Do not overfill the blender or food processor. Put the blended soup back on the stove, and heat slowly but do not boil.
Add the salt and serve hot.
