White Cheese Sauce

Serves: 6

2 tablespoons butter
1 1/2 cups milk or light cream
1/4 teaspoon salt
1 1/2 teaspoons flour
1/8 teaspoon pepper
1/4 pound sharp cheddar cheese (grated)


Over low heat, melt the butter and blend in the flour, stirring constantly until smooth. Gradually add the milk, continuing to stir constantly until the boiling point is reached. Add the grated cheddar cheese and the seasonings to taste. Reduce the heat and cook for 3 minutes longer, stirring all the while.
