Ozark Pudding

Ingredients

1 egg
3/4 cup sugar
1 tablespoon flour
1 teaspoon baking powder
1/8 teaspoon salt
5 small raw apples (peeled, cored and diced)
1 teaspoon vanilla extract
1/2 cup chopped walnuts (for garnish)
1 pint heavy cream

Directions:

Beat the egg and sugar until very smooth and light. Mix the flour, baking powder, and salt, and stir into sugar and egg mixture. Add the apples, nuts and vanilla. Bake in a buttered, covered dish in a 350°F oven for 35 minutes or until the apples are very tender. Remove the cover to brown the top. Serve the pudding cold with whipped cream and garnish with chopped walnuts.
