Grape and Lemon Jell-O® Mold

1 envelope unflavored gelatin
1/4 cup cold water
1/2 cup boiling water
1/4 cup sugar
1 cup grape juice
2 tablespoons lemon juice
1/4 teaspoon salt
1/2 cup finely chopped celery
1 cup diced red-skinned apple


Soften gelatin in cold water and dissolve in boiling water. Add sugar, grape juice, lemon juice, and salt. Stir until sugar is dissolved. Chill. When mixture begins to thicken, fold in celery and apple. Turn into 3 oiled mold cups and chill until firm. Unmold on lettuce and serve with salad dressing.
