Spicy Lentil Stew

Ingredients

1 1/2 cups uncooked lentils, rinsed
4 cups chicken broth (homemade, canned, or bouillon-based)
2 garlic cloves, finely chopped
1 cup chopped onion
1 cup chopped green bell pepper (optional)
1 cup large carrot pieces
1 (15-ounce) can diced tomato, with juice
1 medium sweet potato, peeled and cut into chunks
1/4 - 1/2 teaspoon cayenne pepper
1/2 teaspoon ground cumin

Directions:

Using a large pot with lid, combine lentils, chicken broth, and garlic. Bring to a boil; lower heat, cover, and simmer for 20 minutes. Turn off heat and let lentils sit for 1 hour.

In the meantime, prepare remaining ingredients. After 1 hour, reduce heat to medium. Add remaining ingredients. Cook, uncovered, until carrots and sweet potato are tender, about 30 minutes.

Variation: Serve over rice or other grain.


Fun Fact: Mount Everest in Nepal, also called Mount Chomolungma in Tibet, is the world’s highest mountain. To say that it is 29,029 feet high doesn’t give you a visual of just how high it is. But try to picture it being higher than 21 Empire State Buildings stacked on top of one another. Now that’s high!

The elevation is based on a GPS device implanted on the highest rock point under ice and snow in 1999 by an American expedition. Mount Everest is rising about one-third of an inch a year. Everest is also moving northeastward about three inches a year.

Edmund Hillary from New Zealand and Tenzing Norgay from Nepal became the first climbers to reach the summit on May 29, 1953. Stacey Allison from Portland, Oregon, made the first ascent by an American woman on September 29, 1988. The conditions on the mountain are extremely difficult. By the end of the 2008 climbing season, there had been 4,102 ascents to the summit by about 2,700 individuals.
