Extra Good Vegetable Soup

Serves: 5
Total Calories: 211
Yield: 3 quarts


3 medium onions, chopped
1 pound ground lean beef
1 cup diced potato
1 cup diced celery
1 cup diced green beans
1 cup diced carrot
3 cans beef consommé soup
2 large cans tomatoes, chopped
1 cup dry red burgundy wine
2 tablespoons parsley
1/2 teaspoon basil
1/4 teaspoon thyme
1 cup water


Sauté onions. Cook ground meat until done and drain. Simmer onions, ground meat, and all remaining ingredients for 1 1/2 hours.

Note: A crockpot or slow cooker works well for this soup.
