Creamy Potato Soup

Serves: 8

6 medium potatoes, cubed
1 large onion, chopped
2 carrots, diced small
2 ribs celery, chopped
6 cups water or 3 cups water and 3 cups chicken broth
1 tablespoon salt
1 teaspoon pepper or to taste
1 (12-ounce) can evaporated milk
2 cups cubed Velveeta cheese


In large pot, boil first 7 ingredients until vegetables are tender, about 30 minutes. Add milk and cheese. Lower heat, and cook, stirring, until cheese melts. If you prefer this soup thick, mix 4 tablespoons flour in 1/3 cup cold water. Add 1/2 cup hot soup gradually; return to pot and heat through, stirring gently.
