Broccoli Soup III

3 pounds broccoli (about 3 bunches)
3 (14 1/2-ounce) cans regular-strength (not condensed) chicken broth
1 medium-size onion, chopped
4 tablespoons butter
1/2 teaspoon salt
1 cup peeled, chopped potato
1/4 teaspoon marjoram
1/4 teaspoon thyme
1 pint half and half (or whipping cream)
1 (15-ounce) can evaporated milk
cooked, crumbled bacon for garnish


Cut broccoli head from stems, then peel and slice stalks. Simmer broccoli, broth, onion, butter, salt, potatoes, and herbs, covered, until vegetables are tender. Pureé mixture in food processor or blender until smooth. Stir in milk products. Serve hot or cold.

Note: Liquids (broth and milk) can be adjusted to desired consistency without changing basic ingredients.
