Ingredients

1/2 cucumber, peeled, seeded, and diced
1/2 tomato, seeded and diced
1 tablespoon Lemon-Herb Dressing or Tahini-Lemon Dressing (recipes found in Salad Dressings chapter)
1 tablespoon minced onion
1 tablespoon minced fresh parsley

Directions:

peeler
spoon
chef’s knife, 8-inch
measuring spoons
small bowl
rubber spatula

Put all the ingredients in a small bowl and toss to combine. Serve immediately.
