Sweet Potato Spice Crunch

Ingredients

1 (29-ounce) can sweet potato, drained and mashed
2 eggs, beaten
1 tablespoon sugar
1 spice cake mix
1/2 cup chopped pecans or almonds
1/2 cup butter or margarine, melted

Directions:

Preheat oven to 350 degrees.

Combine potatoes, eggs, and sugar. Press mixture into the bottom of a greased 9 x 13-inch pan. Sprinkle dry cake mix over mixture. Sprinkle nuts over top. Drizzle butter over dry cake mix. Bake 45–50 minutes, or until toothpick inserted in the center comes out clean. Cool and serve. Garnish with a dollop of whipped topping. Makes 16 servings.
